Favorite Chili Recipe for Fall and Winter Days

3 cans of kidney beans

3 – 4 cups of brown rice

3 local green peppers (I freeze roasted peppers from summer and they work beautifully)

1 local onion

3 cloves of local garlic


Sautee diced onion, diced pepper and crushed garlic in about 2 tblsp. of olive oil until softened

Add Spices:

2 – 4 tblsp of chili powder

2 Tblsp Old Bay


Add drained and rinsed beans and cooked brown rice until well combined

Pour in a quart of canned tomatoes (I can my own)

4 cups of water

1/2 cup of local honey

1/4 cup of rice vinegar

1/4 – 1/2 c of soy sauce

Add salt to taste

Simmer and stir with love – enjoy with gluten free GMO free corn muffins
